New veggie menu starts on Monday!!



I'm so excited to announce that Aji-Ichi is going to start new vegetarian menu from Monday, August 2nd.

We have one gorgeous box - V.V. special - two new sushi roll - M.V. roll, C.K. roll - one new ramen - S.V. miso ramen - one new pickles - Z.O.S. pickles.



It's not only healthy but really delicious.
Come and try I'm sure you will like them!!

Angels' share

Have you ever heard of "Angels' share"?

It is a term used among distillers. At the beginning of the distilling process whiskey doesn't have color at all. as clear as water. However after aging in oak barrels, it will gain brownish color little by little. and at the same time they will lose some potion by evaporation. about 4-5% every year, and after 10 years one forth of the whiskey will be away.

Ancient distillers thought there were angels of whiskey inside the barrel and were working to make the whiskey better. That's why after years the clear wild whiskey became beautiful brown and gain rich and mild flavor. And for working the magic on the whiskey angels had little sips as their share. That's how the idea of "angels' share" was born.

In Aji-Ichi the cooks get their share while they're cooking. "tasting" of course.
When some of our cooks cannot show up for flu or for some other reasons, I have a chance to be in the kitchen as a cook. Actually I'm a good one. but I know I have to be careful. If you cook hundreds of meals everyday, you would automatically know what you should do. but if you cook just once in a while even if you are a good one, you have to be extra careful to provide the best quality meal to our valued customers. That's why I often get my "share" when I'm in the kitchen.
And that's why you often see me running on the Marine drive!!

Guam is getting better and better!!

This afternoon I had a chance to talk to Wanjoo, the owner of Margarita's Burritos and BBQ. When I told him that we are planning to put more veggie dishes on our menu, he said that is exactly what he is planning for Margarita's.

I love to have good meat. Though having too much meat is not for health. And it is not good for the environment as well. That was what Wanjoo claiming. All the resources on the earth are limited. And everything on this small island too. We have to build up a sustainable society.

As you know, Japanese food is not too greasy nor meaty. Basically it is good for health. But I think there's more we can do to make our island and earth better.
I don't want to force my customers veggie menus. But I want to leave a choice for those who are seriously thinking about the earth. You can even find a Guam Vegan website. http://guamvegan.blogspot.com/2010/05/aji-ichi.html

And I'm not the only one. Wanjoo and some other restaurant as Simply Food, Healthy Hearts are also thinking about the earth and the island.

I'm pretty sure that Guam would become better as long as there are so many people selfless people thinking for Guam.

Guam will be better and better!!

グアムは日本に比べるとまだ環境意識は低い。
それでも徐々に状況は変わりつつはある。

今日マルガリータス(http://blog.arukikata.co.jp/tokuhain/guam/2010/05/post_170.html)のオーナーのWanjoo氏と話す機会があって「今味一ではベジタリアンメニューを充実させようと思っているんだよね」と言ったところ、彼も「実はうちも同じこと考えているんだ」と食いついてきました。

Wanjoo曰く、「肉の食べ過ぎは健康に悪いだけじゃなくて、そもそも肉牛を育てること自体がなによりも環境によくないんだよ」と。

そう、グアムは健康意識だけじゃなくて、環境意識も確実に高まりつつあります。

やっぱり「南の島」というとピースフルであって欲しいと思うと思うけれども、太平洋の多くの島ではゴミを中心に環境は潜在的に大きな問題になりつつあるんですよ。

ひとつのレストランができることは少ないかも知れないけれども、こういう問題意識を共有し続けたら、絶対社会全体がよくなっていきますよね。

グアムを南太平洋の環境モデルケースにできたらいいですよね。
がんばります。

Congrats, Spain!

Did you see the final match of World Cup today? It was a tough and a good one.
When the Spanish MF Iniesta scored the only goal of the game at 116minutes, he ripped off his team shirts and showed an undershirts with a print saying “Dani Jarque seimpre con nosotros”. This means "Dani Jarque Always With Us" in English. Dani Jarque was a Spain defender when he passed away by a heart attack last August. He got a yellow card for taking off his shirts but he didn't care at all. “This is for Dani Jarque, for my family, for all of the people. It is the result of hard work over a long time and some difficult moments,” He told ESPN.

There were a lot of dramas in the world cup. I'm going to miss it. But no more sleepless night at last. Back to normal. Enjoy the rest of the summer vacation Guam!


ワールドカップ、スペインの優勝で終わりましたね。日本代表も戦前の予想を遥かに上回る活躍をして日本でもかなり盛り上がったんですってね。でもこちらグアムはアメリカ圏ということもあって、サッカーはあまり盛んではありません。しかし暑いこともあり、子供たちがやるスポーツとしては、実はアメリカンフットボールよりもサッカーの方がさかん。またヨーロッパから来ている人もいるので、それなりには盛り上がっていましたよ。
さて優勝のスペイン。ゴールを決めたMFイニエスタはシュート後にジャージを脱いでいましたが、今はそういった挑発、威嚇行為は禁止されているので即刻イエローカード。それでも彼がいに介さなかったのはジャージの下に書かれていた文言をアピールしたかったから。
“Dani Jarque seimpre con nosotros”「ダニー・ハルケはいつも俺たちとともにいる」。
昨年の8月に心臓発作でなくなったスペイン代表DFハルケ選手に捧げたものだったんですね。
なんか涙でてきちゃいますね。

eco friendly chopsticks


some of you already may have noticed that we stopped using wooden chopsticks at Aji-Ichi.
some of the customers prefer to the wooden chopsticks but we had a reason to change.

Every year, tons of trees are made into chopsticks whole over the world. This is becoming a big issue from the environment point of view.

So we have decided stop using disposable chopsticks. Among various kinds of restaurant chopsticks, we have chosen the best one which won't be slippery when you're having noodles. I understand still some of the customers prefer to wooden chopsticks. But please understand that we are doing this considering the global environment.

Aji-Ichi is trying to be good to the community and the earth.

味一Upper Tumon店とBluelagoon店では今年の5月から割り箸を使用することをやめました。
もちろん環境を考えてのことです。
グアムでは最近になって少しずつ環境意識が高まってきましたが、残念ながらまだ環境の観点から割り箸の使用をやめているお店は見ません。だから「割り箸の方が使いやすいからもってきてくれよ」と仰るお客様もまだいらっしゃいます。それでも「環境のためにやっているのでご理解よろしくお願いします」と説明すると理解してくださるようになってきています。
世界が少しでもよくなれるようみんなで協力しあえたらいいですね。

Aji-Ichi started its blog!!

Hi, it's another beautiful day on Guam. Is everybody ready for weekend?
